Natalie came home from school and declared that she wanted to make something in the kitchen. I didn’t know what she wanted to make and she didn’t know either so I told her to go online and find something.
She came back with a couple of recipes. Jello in Oranges and short bread cookies. I didn’t have any oranges in the house or white flour either. So I googled a whole wheat flour recipe and she got to work.
I didn’t realize how easy it was to make it, with only 4 ingredients and sprinkles or sugar for the toppings. Here is her finished product and am happy to say that she shared it with her brothers.
It was fun activity for both of us especially when making it for the first time, not knowing how it was going to turn out. It is always a treat to receive them at Christmas from Grandma.
Ingredients:
2 cups Whole Wheat Flour
1/4 tsp Salt (I omitted this)
1/4 tsp Baking Powder
1 cup Unsalted Butter(soften)
1/2 cup Granulated Sugar (I used brown sugar as that is all I had)
Directions
Step 1
Sift together flour, salt and baking powder.
Cream the butter and sugar until just incorporated. Do not overmix!
Step 2
Add the sifted dry ingredients to the butter mixture. Mix on low until just incorporated.
Step 3
Roll the dough to ½-inch thick (if the dough is too soft to roll, shape into a 4×10-inch rectangle, wrap in plastic and chill until firm). Cut into bars, circles or desired shape and dock in the center with a fork. Wrap and chill until hard, 2 hours or overnight.
Step 4
Preheat oven to 350°F. Grease a baking sheet or line with parchment paper.
Step 5
Place cookies on prepared baking sheet and sprinkle with sugar, if desired. For light coloring, do not separate bar cookies. Bake until edges are lightly browned, about 20 minutes
Step 6
Cool and store, wrapped, at room temperature for up to 1 week.
Makes 20 cookies.
