Sneaky Lentil Cookies

Lentil Cookies

I have cut down on the sugar and chocolate chips on this recipe, adjust the extras according to what you want.

Recipe:
1/2 cup (125mL) butter, softened
3/4 cups brown sugar (recipe asked for 2 cups)
1 egg
2 tsp (30ml) Vanilla
3/4 cup (125ml) Lentil puree ( recipe asked for 1/2 cup)
2 cups whole wheat flour (recipe asked for all purpose flour)
1/2 tsp salt
2 tsp(10ml) baking powder
1 cup chocolate chips (recipe asked for 2 cups)
2-3 tbsp shredded coconut
raisin or cranberries or any other dry fruit

Preheat oven to 375F(190C).  Cream together butter and sugar until smooth and combined.  Add egg, vanilla, and lentil puree and continue unit mixture is smooth once again.

In a separate bowl, whisk together flour, baking powder, and salt, evenly distributing finer powders among coarser ones. Add dry ingredients to wet ingredients and mix well.  Stir in chocolate chips and remainder fillings.

Roll into balls and flatten or drop by spoonful. Placing about 2 inches apart on a lightly oiled baking tray. Bake for 12 minutes. Cool.

Makes about two dozen cookies.
