I really enjoy baking and as we journey to becoming vegans, I have started experimenting with substitutes for baking. My first one was substituting eggs with apple sauce. 1/4 cup apple sauce for one egg in my Whole Wheat Banana Muffin Recipe. It didn’t taste any different and the texture was the same. I continued to use butter as I have not had a chance to do research on what kinds of margarine to use yet. I just found out about genetically modified canola margarine which scares me so I will add more as I find out more.
Whole Wheat Banana Muffin without Eggs
3 – 4 Bananas – mashed
1/2 cup butter or margarine – melted
1/2 cup apple sauce
1/4 cup sugar
1.5 cup whole wheat flour
1/2 teaspoon baking soda
Mix the apple sauce, sugar and butter together. Mix the flour and baking soda together and add it to the first mixture. Pour into muffin pans and bake for 3o minutes at 350F and 20 minutes for mini-muffins.
For variety, add raisins or chocolate chips.
